Portobello Mushrooms with Garlic
from the Community Gardener's Collection
Delicious as a side dish or over pasta
  • 2 to 3 Portobello mushrooms, sliced
  • 2 cloves garlic
  • 2 shallots
  • 2 T olive oil
  • 1 T balsamic vinegar
  • 1 T chopped fresh parsley
  • Salt and pepper to taste

Heat oil in sauté pan, add garlic and shallots, sauté 2 minutes.

Add mushrooms and continue sautéing until mushrooms are soft but still hold their shape, about 10 minutes.

Add the vinegar, cover the pan, and cook 1 minute.

Finish by stirring in salt and pepper and adding parsley over the top.
