Mixed Green Stir-fry

- 1 ½ pounds mixed greens (i.e., braising greens, chard, mustard mix, kale, spinach)
- 2 cloves garlic, thinly sliced
- 2 slices of bacon, cut in pieces, or 1 ½ tblsp extra-virgin olive oil
- ¼ to ½ t red pepper flakes (optional)
- 1 ½ T soy sauce (Soy Vay is best)
- 1 hard boiled egg, chopped in small pieces
Wash the greens well and coarsely chop but do not dry.
In a large skillet, brown bacon and drain, or heat oil at medium heat. Add garlic and chili pepper.
Cook until garlic is just beginning to color, about 1 minute. Add greens and cover the pan. Cook over high heat until steam appears, stirring occasionally. Reduce heat and simmer until tender, about 3 to 5 minutes. Stir occasionally.
Add hard-boiled egg and soy sauce. Simmer 1 more minute until egg is heated.
